Pancake Puff

4 eggs 1cup flour Dash of nutmeg 1 cup skim milk 4 apples, peeled and chopped 1/4 cup raisins 1/4 cup chopped walnuts Cinnamon and sugar to taste 4 tablespoons sunflower margarine Powdered sugar Maple Syrup Beat eggs, add flour, nutmeg, and milk. Mix until blended (batter will be a little lumpy). Optional: In a separate bowl combine apples, raisins, and nuts, and sprinkle with sugar and cinnamon to taste. Put 4 Tbls margarine in the dish you are using or you can separate them into 4 individual serving dishes and put 1 Tbls per dish. Place into the oven and preheat oven to 400 degrees. Allow the butter to melt in the dish as the oven preheats. Remove from oven and pour 1/2 cup of batter into each fo the dishes. Option: Top with fruit mixture. Bake 30 minutes for one dish or 15-20 if in 4 separate dishes, until golden and puffy. Tip: DO NOT OPEN THE OVEN WHILE IT COOKS OR IT WILL DEFLATE Dust with powdered sugar. Cinnamon-Coffee Cookies INGREDIENTS  1 tablespoon іnѕtаnt coffee crystals  1 Tаblеѕрооn hоt wаtеr  ½ cup buttеr, softened  ½ сuр ѕhоrtеnіng  ¾ сuр granulated ѕugаr  ¾ cup packed brown sugar  2 tеаѕрооnѕ grоund cinnamon  1 tеаѕрооn bаkіng powder  ½ tеаѕрооn ground nutmeg  ¼ tеаѕрооn baking ѕоdа  ¼ tеаѕрооn ѕаlt  ¼ tеаѕрооn ground cloves  2 eggs  1 tеаѕрооn vаnіllа  2 ¼ cups аll-рurроѕе flоur  INSTRUCTIONS  Stіr thе coffee сrуѕtаlѕ into 1 tаblеѕрооn hоt wаtеr untіl dissolved аnd set аѕіdе.  In a large bоwl, using an electric mіxеr bеаt tоgеthеr the buttеr аnd thе shortening fоr аbоut 45 ѕесоndѕ оr until well blеndеd. Bacon and Cheddar Jalapeno Poppers

Prep Time:  15   minutes Cook Time:  20   minutes Total Time:  35   minutes Servings:  6   or in my house just 1person ;) Ingredients 12   jalapeno peppers 1   cup   cream cheese 1   cup   cheddar cheese 2   shallots   , minced 1   garlic clove   , minced 1/2   tsp   salt 1/2   tsp   paprika 10   slices   cooked bacon   , crumbled Instructions Make the cheese filling by mixing the cream cheese, cheddar cheese, shallots, garlic, salt and paprika. Stir in some of the bacon crumble reserving some for the topping. Core the jalapeno peppers and/or remove the stems off the mushrooms. Fill the peppers and/or mushrooms with the cheese mixture and top with the remaining bacon crumble. Bake in a 350F oven for 15-20 minutes. Serve hot.

Smoked Chicken Thighs

INGREDIENTS 8  chicken thighs Brine  (see recipe below) BBQ Sauce of your choice (I use Sweet Baby Rays) Brine Recipe: (this is enough for one large chicken so you can half the recipe if you like). BBQ Rub (I use 4Rivers Seasoning or Bad Byron's Butt Rub) Fruit wood- apple, cherry, etc (my favorite is Cherry) Hickory wood BRINE RECIPE: 1 gallon  warm water ¾ cup  kosher salt 2/3 cup  sugar ¾ cup  soy sauce ¼ cup  olive oil BEFORE GRILLING DIRECTIONS Mix your brine ingredients in a large container and let your thighs sit in the brine for 4 hours in the refrigerator or longer before putting on the smoker. INSTRUCTIONS Oil your grill grates with canola oil so your chicken won’t stick to the grates. Prepare a grill for direct and indirect grilling with the direct side getting hot enough to sear the chicken briefly. Pat the chicken dry after removing it from the brine. Now, sprinkle your thighs generously with BBQ rub. With the lid off, sear the chi
