Chocolate Chip Meringues with Peppermint Ice Cream and Homemade Chocolate Mint Sauce

Serves 6 Meringues: Melted Unsalted butter 2/3 cup powdered sugar 2 T plus 1/2 cup sugar 1/2 cup egg white (4 eggs) 1/8 tsp salt 2 ounces semisweet chocolate Sauce: 1/4 cup whipping cream 1/4 cup H2O 2T sugar 8 ounces semisweet chocolate chopped 3/4 tsp peppermint extract For Topping: Peppermint Ice Cream and Peppermint Candies  For Meringues: Preheat oven to 225 deg. Line 2 heavy baking sheets with parchment paper. Brush with melted butter. Whisk 2/3 cup powdered sugar with 2 T regular sugar to blend. Beat egg whites with salt until foamy and beginning to hold soft peaks. Slowly beat in 1/2 cup sugar until stiff and shiny. Fold in powdered sugar mixture, then 2 oz of semisweet chocolate. Spoon onto sheets in 6 mounds. Spread into circles and indent the center to form a bowl. Bake 1 hour and 30 minutes. Cool completely. Sun Dried Tomato Chicken

Download Ingredients to the Swift Shopper App here:  https://tzy1.app.link/ T7qObPqUvH A large pack of chicken tenders (1.5 - 2.0 pounds) 2 Tbsp EVOO (extra virgin olive oil) Salt and pepper to taste 1/2 cup onion, diced 2 tsp garlic, minced 1/3 cup sun dried tomatoes, chopped small  2 Tbsp all purpose flour  1 1/2 cups chicken broth 1/2 cup white wine 1 Tbsp butter 1/4 - 1/2 cup heavy cream 1/4 cup fresh basil, chopped Trim chicken and season with salt and pepper.  Have your EVOO very hot when you add the chicken.  Turn them over when the first side is done.  You should have some really pretty color on them.  Once cooked through, remove them to a plate and cover to keep warm.  Throw in the onions and garlic.  Do NOT let the garlic burn.  Stir them around and cook on medium or so for a couple of minutes until softened.  Add in the finely chopped sun dried tomatoes.  Add in a couple tablespoons of all purpose flour.  Stir until smooth.  Add in the chicken bro

Quesadilla Burgers

Prep time: 15 min Prep Time: 15 min Cook Time: 10-15 minutes INGREDIENTS 1 lb ground beef 1⁄4 cup onions, diced 2 tablespoons cilantro, chopped  2 cloves garlic, minced 1/2 teaspoon cumin 1/4 teaspoon chipotle chili powder  Salt and pepper to taste 1 tablespoon vegetable oil 4 small flour tortillas  1 cup Mexican cheese blend, shredded 1 jalapeño, sliced and deseeded  Sliced tomatoes Sliced avocados  Chipotle Mayo 1) In a bowl, add ground beef, onions, cilantro, garlic, cumin, chipotle chili powder, salt and pepper. Mix until everything is combined. Make two large burger patties (similar to the size of your tortillas).  2) Heat vegetable oil in a skillet over high heat, reduce to medium-high and cook burgers, about 3 to 4 minutes per side. Add a few more minutes if you want them more well done. Remove burgers from skillet and set aside.  3) Drain excess oil from pan. Evenly divide shredded cheese among 4 tortillas, and cover two with sliced jalapeños.

Prep Time: 20 minutes Cook Time: 10-13 minutes Calories: 300  Slaw 1/4 cup sliced green onions with tops 2 TBls snipped fresh cilantro 1 Tbls fresh lime juice 1 Tbls vegetable oil 1 garlic clove, pressed 1 tsp sugar 1/2 tsp Cajun or blackened fish seasoning 2 cups broccoli slaw mix Fish 1 pound white fish  1 Tbls Cajun or blackened fish seasoning 1 avocado, seeded and sliced 8 tortillas, warmed 3 medium radishes Additional snipped fresh cilantro For slaw, in a small bowl, combine green onions, cilantro, lime juice, oil, garlic pressed with Garlic press, sugar and cajun seasoning, whisk until blended. Add slaw mix; toss to coat. Cover; refrigerate until ready to serve. Heat Grill Pan over Medium heat 5 minutes. Moisten fish fillets with water and sprinkle with Cajun seasoning. Prep Time: 15 minutes Bake Time: 30-35 minutes Calories: 270 Turkey and Vegetable Filling: 2 cups diced cooked turkey or chicken 1 cup sliced carrots 1/2 cup chopped onion 2 cups broccoli florets 1 can (10 3/4 oz) 98% fat-free reduced-sodium condensed cream of chicken soup 1/2 cup 100% fat-free chicken broth 1/2 cup 2% reduced-fat milk 1 garlic clove, pressed 1/4 tsp dried thyme leaves 1/8 tsp ground black pepper Biscuit Topping: 1 1/2 cups reduced-fat all-purpose baking mix 1/2 cup 2% reduced-fat milk 1 egg white Preheat oven to 400 deg F.
