Christmas Dinner - Smoked Prime Rib and Baked Acorn Squash

We just made the most awesome Christmas Beef Rib Roast after following the following youtube video: https://www.youtube.com/watch?v=w0PWyH7LEM8 On top of that, we made Baked Acorn Squash with Brown Sugar, Maple Syrup and Butter which was exceptional. Ingredients 1 acorn squash, cut in 1/2 2 tablespoons brown sugar 2 tablespoons butter, softened 2 tablespoons maple syrup Salt Freshly ground black pepper Directions: Preheat oven to 400 degrees F. Scoop the seeds and stringy pulp out of the squash cavities and discard. In a small mixing bowl, combine the brown sugar, butter, syrup and salt and pepper, to taste. Rub the squash cavities and cut sides of the squash with the butter mixture and place them on a baking sheet, cut side up. Bake in the preheated oven for about 1 hour until the squash is tender when pierced with a fork. Serve 1 half per person. Ensalada Granjero

I made this Mexican Salad with some grilled pork kabobs and onions. The salad was a definite hit with the adults and the more grown up kids palettes.  :) Download the ingredients to the Swift Shopper App Here : 4 Ears of Fresh Sweet Corn, Husks and Silks Removed 1 1/2 pounds of fresh green beans, trimmed 3 cups grape tomatoes 1/2 of a small onion, thinly sliced (I used a whole one) 1 cup snipped fresh cilantro 1/2 cup olive oil 3 fresh jalapeño chile peppers, stemmed, seeded, and chopped (I only used 1 and it was enough heat) 2 shallots, chopped 3 Tbls cider vinegar (I used apple cider vinegar and it was good) 1 1/2 tsps bottled minced roasted garlic (I used 4 cloves of fresh minced garlic) 1/4 tsp salt 1/2 cup crumbled Cotija Cheese (I used Garlic and Herb Feta) 1. In a Dutch Oven (I just used a big pot) cook corn in a large amount of boiling salted water for 5 to 7 minutes or until tender. Remove corn and set aside to cool. Add beans to the boiling

Excellent Chicken Enchiladas

   5 tablespoons   butter, divided      1  medium onion, chopped    1  medium-size red bell pepper, chopped    2 cups   chopped cooked chicken       3  (4-oz.) cans diced green chiles, divided (I didn't add and it was still excellent)    3 cups   (12 oz.) shredded colby-Jack cheese blend, divided (I used 4 cheese Mexican blend cheese and it was excellent)    8  (8-inch) soft taco-size flour tortillas      2 tablespoons   all-purpose flour    3/4 cup   chicken broth    1/2 cup   milk    Toppings: fresh cilantro leaves, chopped tomato, shredded lettuce   Preparation    1. Preheat oven to 350°. Melt 2 Tbsp. butter in a large skillet over medium heat; add onion and bell pepper, and sauté 5      minutes or until tender.    2. Stir together onion mixture, chicken, 1 can diced green chiles, and 2 cups shredded cheese. Spoon a heaping 1/3     cupful chicken mixture on 1 end of each tortilla, and roll up. Poppy Seed Chicken O'Dell Style

Makes 6 servings Ingredients 3 cups   chopped cooked chicken   1  (10 3/4-oz.) can cream of chicken soup, undiluted 1 (10 3/4-oz.) can cream of mushroom soup, undiluted 1  (16-oz.) container sour cream   3 teaspoons   poppy seeds 62  round buttery crackers, crushed   1/2 cup   butter, melted Preparation Cook Time:   40 Minutes  Prep Time:   10 Minutes  1. Combine first 4 ingredients. Spoon mixture into lightly greased 11- x 7-inch baking dish. 2. Stir together cracker crumbs and melted butter; sprinkle evenly over casserole. 3. Bake at 350° for 35 to 40 minutes or until hot and bubbly. I used Ritz Crackers personally, but any yummy buttery cracker will do! Serve over white rice!
