Christmas Dinner - Smoked Prime Rib and Baked Acorn Squash

On top of that, we made Baked Acorn Squash with Brown Sugar, Maple Syrup and Butter which was exceptional.

Ingredients
1 acorn squash, cut in 1/2
2 tablespoons brown sugar
2 tablespoons butter, softened
2 tablespoons maple syrup
Salt
Freshly ground black pepper

Directions:

Preheat oven to 400 degrees F.

Scoop the seeds and stringy pulp out of the squash cavities and discard. In a small mixing bowl, combine the brown sugar, butter, syrup and salt and pepper, to taste. Rub the squash cavities and cut sides of the squash with the butter mixture and place them on a baking sheet, cut side up. Bake in the preheated oven for about 1 hour until the squash is tender when pierced with a fork. Serve 1 half per person.

Prime Rib:

Seasoning: 
3 Tbls Salt
2 tsp garlic powder
2 tsp onion powder
2 tsp black pepper

Stick garlic down into the center of the meat. Then Score the top of the meat. Rub seasoning all over for a delicious outside. Cut up a stick of butter and rub all over the top. Put in a pan that fits in the smoker. Cook for 15 minutes at 400-500 degrees. Bring the temp down to 325 for the rest of cooking. Put a small amount of beef broth in the bottom of the pan. Let cook for 45 minutes. Do it again. Let cook for 45 more minutes. Roast should come to 120 degrees. Take off the smoker and cover with foil for 30 minutes. Should come up to Medium Rare/Medium. Slice and serve hot.
