Just Like Great Grandma's Apple Pie

My Great Grandma always made the most amazing Apple Pies. I found out she just used the Pastry Recipe from the old Tupperware Mats, so glad people take pictures of it and put it on the internet!  I started using it for our Thanksgiving Apple Pies. So amazing!  Pastry: 2 Cups Sifted All Purpose Flour 1 Tsp Salt 2/3 cup Shortening (I used Crisco) 5 to 6 Tbls Cold Water Mix and Chill Yield: 2 - Crust, 8-9 Inch Pie Apple Pie Ingredients 8 peeled & sliced, all Gala apples 2 sticks cold and cubed, plus 2 tablespoons cold and sliced unsalted butter  1 1/4 cups sugar  1 tablespoon ground cinnamon  1 teaspoon ground nutmeg  2 tablespoons flour  1 teaspoon salt  1 lightly beaten, for egg wash egg  for dusting cinnamon sugar  Directions Preheat oven to 400 °F. Butterscotch Cinnamon Pie

Filling   6 tablespoons cornstarch 1 teaspoon ground cinnamon 1 teaspoon salt 4 egg yolks ¼ cup salted butter ½ cup dark brown sugar 1 cup heavy cream 2 ½ cups whole milk ½ cup butterscotch chips Filling   In a medium bowl, whisk 6 Tbls cornstarch,  1 tsp salt, and 4 egg yolks until combined.  Whisk in milk. In a saucepan, melt 1/4 cup butter over medium-high heat. Once melted and add 1/2 cup dark brown sugar. Bring to a boil and whisk constantly for 3 minutes. Combine the egg mixture, the sugar mixture, and 1 cup of heavy cream.  Add cinnamon and then bring to a boil, whisking constantly. Once thickened, remove from heat and then whisk in butterscotch chips. Place in mini graham crusts or one full pie graham crust.  Once fully cool, put wrap over them and place them in the fridge until ready to serve.

INGREDIENTS FOR POTATOES 1 1/2 lb.  potatoes, peeled Kosher salt 4 tbsp.  melted butter 1/4 c.  milk 1/4 c.  sour cream Freshly ground black pepper FOR BEEF MIXTURE 1 tbsp.  extra-virgin olive oil 1  large onion, chopped 2  carrots, peeled and chopped 2  cloves garlic, minced 1 tsp.  fresh thyme (I used dried) 1 1/2 lb.  ground beef 1 c.  frozen peas 1 c.  frozen corn (I used fresh) 2 tbsp.  all-purpose flour 2/3 c.  low-sodium chicken broth 1 tbsp.  freshly chopped parsley, for garnish (didn't use) DIRECTIONS Preheat oven to 400°.
