Chili Burgers

 1 tsp vegetable oil 1 small onion, chopped 2 cloves garlic  1 jalapeno pepper, seeded and minced 1 1/2 tsp ground cumin 3/4 cup black beans, drained and rinsed 2 slices firm whole wheat bread, torn in small pieces 2 Tbls tomato paste 1 lb extra lean ground beef 2 Tbls chopped fresh cilantro or parsley 1/2 tsp salt 1/2 tsp ground pepper 4 onion rolls, split 1 cup shredded lettuce 1 cup salsa Directions: Preheat broiler or grill according to manufacturers directions. In small nonstick skillet, over medium heat, heat oil. Add Dino, cooking and stir about 3 minutes or until lightly colored. Add garlic, jalapeño and cumin; cook about 1 minutes more. Transfer to a dish to cool In a medium bowl combine beans, bread and tomato paste and mash into a rough paste. Add ground beef cilantro, salt and pepper and the reserved onion mixture. Taco Soup

  Ingredients 2   Tbs   olive oil 3 lbs   lean ground beef  cooked with McCormicks Taco Seasoning 2  medium yellow onion chopped   (1 1/2 cups) Head of  garlic,   minced  3  jalapeno,   seeded and finely chopped (optional)* 3  (14.5 oz) cans   diced tomatoes with green chiles 1 (14.5 oz) can fire roasted peppers 1   (32 oz) can   low-sodium beef broth 2  (8 oz) can   tomato sauce 1Tbsp   dry ranch dressing mix 6 ear fresh corn cut off cob 2  (14.5 oz) can   black beans,   drained and rinsed Heat up ground beef. Get rid of fat, add water just to barely cover meat and add McCormick taco seasoning. Bring to boil then simmer for 10 minutes stirring regularly. Pour olive oil into dutch oven. INGREDIENTS FOR POTATOES 1 1/2 lb.  potatoes, peeled Kosher salt 4 tbsp.  melted butter 1/4 c.  milk 1/4 c.  sour cream Freshly ground black pepper FOR BEEF MIXTURE 1 tbsp.  extra-virgin olive oil 1  large onion, chopped 2  carrots, peeled and chopped 2  cloves garlic, minced 1 tsp.  fresh thyme (I used dried) 1 1/2 lb.  ground beef 1 c.  frozen peas 1 c.  frozen corn (I used fresh) 2 tbsp.  all-purpose flour 2/3 c.  low-sodium chicken broth 1 tbsp.  freshly chopped parsley, for garnish (didn't use) DIRECTIONS Preheat oven to 400°. Prep time: 15 min Prep Time: 15 min Cook Time: 10-15 minutes INGREDIENTS 1 lb ground beef 1⁄4 cup onions, diced 2 tablespoons cilantro, chopped  2 cloves garlic, minced 1/2 teaspoon cumin 1/4 teaspoon chipotle chili powder  Salt and pepper to taste 1 tablespoon vegetable oil 4 small flour tortillas  1 cup Mexican cheese blend, shredded 1 jalapeño, sliced and deseeded  Sliced tomatoes Sliced avocados  Chipotle Mayo 1) In a bowl, add ground beef, onions, cilantro, garlic, cumin, chipotle chili powder, salt and pepper. Mix until everything is combined. Make two large burger patties (similar to the size of your tortillas).  2) Heat vegetable oil in a skillet over high heat, reduce to medium-high and cook burgers, about 3 to 4 minutes per side.
