Chili Burgers

 1 tsp vegetable oil

1 small onion, chopped

2 cloves garlic 

1 jalapeno pepper, seeded and minced

1 1/2 tsp ground cumin

3/4 cup black beans, drained and rinsed

2 slices firm whole wheat bread, torn in small pieces

2 Tbls tomato paste

1 lb extra lean ground beef

2 Tbls chopped fresh cilantro or parsley

1/2 tsp salt

1/2 tsp ground pepper

4 onion rolls, split

1 cup shredded lettuce

1 cup salsa

Directions:

Preheat broiler or grill according to manufacturers directions. In small nonstick skillet, over medium heat, heat oil. Add Dino, cooking and stir about 3 minutes or until lightly colored. Add garlic, jalapeño and cumin; cook about 1 minutes more. Transfer to a dish to cool

In a medium bowl combine beans, bread and tomato paste and mash into a rough paste. Add ground beef cilantro, salt and pepper and the reserved onion mixture. Mix thoroughly. Shape into four 1" thick patties. Broil or grill burgers about 5 minutes on each side. Meanwhile, toast rolls on edge of grill or in toaster. Assemble burgers, topped with lettuce and salsa.

Serves 4.
