Pancake Puff
4 eggs
1cup flour
Dash of nutmeg
1 cup skim milk
4 apples, peeled and chopped
1/4 cup raisins
1/4 cup chopped walnuts
Cinnamon and sugar to taste
4 tablespoons sunflower margarine
Powdered sugar
Maple Syrup
Beat eggs, add flour, nutmeg, and milk. Mix until blended (batter will be a little lumpy).
Optional: In a separate bowl combine apples, raisins, and nuts, and sprinkle with sugar and cinnamon to taste.
Put 4 Tbls margarine in the dish you are using or you can separate them into 4 individual serving dishes and put 1 Tbls per dish. Place into the oven and preheat oven to 400 degrees. Allow the butter to melt in the dish as the oven preheats.
Remove from oven and pour 1/2 cup of batter into each fo the dishes.
Option: Top with fruit mixture.
Bake 30 minutes for one dish or 15-20 if in 4 separate dishes, until golden and puffy.
Tip: DO NOT OPEN THE OVEN WHILE IT COOKS OR IT WILL DEFLATE
Dust with powdered sugar. Serve immediately with maple syrup.
